This easy broccolini soup recipe is ready in 30 minutes. A creamy blend of broccolini, spinach & cheddar cheese. Perfect healthy comfort food!

- 2 tablespoons olive oil
- 1 onion, diced
- 4 garlic cloves, chopped fine
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 6 cups broccolini
- 6 cups vegetable broth
- 1 bay leaf
- 1 teaspoon salt
- 2 cups fresh spinach
- 1/2 cup cheddar cheese, shredded
- Black pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onions and cook until translucent.
- Add garlic, red pepper flakes, and 1/2 teaspoon salt. Cook briefly until fragrant. Add broccolini, followed by vegetable broth, bay leaf, and remaining 1 teaspoon salt. Cook until broccolini is cooked through.
- Remove bay leaf and add fresh spinach. Cook for a few minutes until spinach wilts.
- Transfer mixture to a blender and blend until smooth. Ladle into bowls and top with shredded cheddar cheese and black pepper to taste. Enjoy!
Notes
- Use a high-powered blender for the smoothest texture. If using an immersion blender, the texture may be slightly less smooth.
- Safety note: Allow soup to cool slightly before blending if your blender struggles with hot liquids, or blend in smaller batches.
- Broccolini prep: Trim any tough ends from the broccolini before adding to pot.
- If soup is too thick after blending, thin with additional vegetable broth to desired consistency.
