    It may surprise you to hear that sometimes I like to eat healthy. And it may surprise to you learn that one of my favorite foods is broccolini. A vibrant bowl of this healthy green soup is something we pull out whenever the weather calls for something warm and nourishing. 

    This broccolini soup strikes the perfect balance between healthy and indulgent, transforming humble vegetables into something genuinely exciting. The combination of tender broccolini, fresh spinach, and a touch of sharp cheddar creates a soup that’s both sophisticated enough for dinner guests and simple enough for a weeknight meal.

    You get a lot of flavor with a relatively simple ingredient list, making this an ideal choice for busy home cooks who refuse to compromise on taste or nutrition.

    The soup combines broccolini with aromatics like onion and garlic, before being blended to silky smoothness. What sets a great broccolini soup apart is attention to layering flavors - the gentle heat from red pepper flakes, earthy spinach, and the richness of a quality vegetable broth. The addition of cheddar cheese at the end provides both creaminess and a sharp counterpoint to the vegetables’ natural sweetness. (Also, cheese. I love cheese.)

    • Bay leaf adds an aromatic complexity
    • Fresh spinach adds nutrition and deepens the green color
    • Cheddar cheese provides the creamy finish - freshly shredded melts better than pre-packaged varieties

    How to Make Broccolini Soup?

    Start by warming olive oil in a heavy-bottomed pot, then slowly cooking diced onions until they turn golden and translucent - this creates the flavor foundation for everything that follows. The garlic, red pepper flakes, and salt are added next – this mix should be fragrant in your kitchen!  

    The broccolini can go in whole or chopped (but chopped is easier to work with), followed by the vegetable broth and bay leaf. There’s something satisfying about watching the bright green stalks gradually soften as they simmer. You’ll know they’re ready when a fork easily pierces the thickest stems - usually about 10-12 minutes of gentle cooking. Remove the bay leaf.

    Stir in the spinach, it’ll wilt quickly in the hot broth. Then transfer everything to a high-speed blender and blend until smooth. Ladle the soup into bowls and top each serving with a generous sprinkle of sharp cheddar and freshly cracked black pepper. Enjoy!

    Tips

    Use the right tools

    Use a high-powered blender for the smoothest texture - immersion blenders work, but usually won’t achieve the same velvety consistency. If your blender struggles with hot liquids, let the soup cool slightly before blending, or work in smaller batches.

    Cook it just right

    Don’t skip the step of cooking onions until translucent - this sweetness balances the broccolini’s natural bitterness. When adding garlic, watch carefully to prevent burning, which would add unwanted bitter notes to your soup.

    Getting the best color

    For the best color, add spinach just before blending. Overcooking spinach can dull that vibrant green you’re after. If you want extra richness, reserve some of the cooking liquid before blending and adjust the consistency to your preference.

    Season throughout

    Season gradually throughout cooking rather than all at once. Taste after blending and adjust salt and pepper as needed - the flavors concentrate during the blending process.

    Storage Suggestions

    Refrigerate

    Refrigerate for up to 4 days in an airtight container. When reheating, do so gently over medium-low heat, stirring occasionally to prevent sticking.

    Freeze

    For longer storage, freeze the soup in portion-sized freezer-safe containers for up to 2 months. Skip adding the cheese before freezing - instead, add fresh cheddar when serving the reheated soup.

    • 2 cups fresh spinach
    • ยฝ cup cheddar cheese, shredded
    • Black pepper, to taste

    Instructions

    1. Heat olive oil in a large pot over medium heat. Add diced onions and cook until translucent.
    2. Add garlic, red pepper flakes, and ยฝ teaspoon salt. Cook briefly until fragrant. Add broccolini, followed by vegetable broth, bay leaf, and remaining 1 teaspoon salt. Cook until broccolini is cooked through.
    3. Remove bay leaf and add fresh spinach. Cook for a few minutes until spinach wilts.
