    A delicious recipe you can eat any time of the day. Made relatively few ingredients, herb and garlic breakfast potatoes are a mouth-watering favorite. With a simple combination of ingredients, this dish is a burst of flavors. 

    A good potato recipe is always a treat to have paired with any meal. Think about it, if you add French fries, mashed potatoes, sweet potato fries or roasted potatoes to any meal as a side dish it immediately becomes better right?

    This might be a little dramatic but breakfast potatoes are one of the very best ways to start the day. They can be enjoyed in many different ways and are a food favorite to many. Whatever way you choose to dress them up, Herb and Garlic Potatoes are the mouth-watering side dish you are looking for. Crispy golden brown potatoes tossed in herbs and spices, and lovely, lovely, garlic. It even sounds delicious!

    This recipe only requires a few ingredients and is very easy to make. Perfect for a morning side dish when you don't feel like hovering over the stove for hours. And just as good as alongside a more substantial dinner or lunch.

    Which Potato to Use

    This recipe is best made with yellow potatoes. They have a lovely flavor to them that pairs well with other dishes. They are also great for holding in the flavor when being cooked. The potatoes to look for would be Yukon potatoes, or russet potatoes. There are different types of yellow potatoes but Yukon and Russet potatoes can usually be found easily at the supermarket. If neither is available, you can try any waxy yellow potato available. 

    Of course, if you prefer red potatoes, then use red potatoes. They absorb oils just like yellow potatoes but they don't have that natural buttery flavor to them. (Still yummy though!)

    How to Cook the Potatoes

    When cooking potatoes for any dish the one question you ask yourself is, "Do I need to boil potatoes before I cook them?". For this recipe, it isn't necessary to soften the potatoes before you cook them, but it can benefit how crispy the potatoes get. You can simply cut them up into half slices, mix them into the seasoning blend and place on a baking pan to put into the oven. 

    Before adding them to the oven, preheat it to 425 degrees (don't forget to spray or line the pan beforehand so the potatoes don't stick).

    For better roasting tips, make sure your potatoes are spread out on the pan and not crowding each other. This benefits the crispiness of the potato. 

    If you choose to boil them beforehand, cut them into cubes/halves and place them into boiling water for 8-10 minutes, until soft. When cooking potatoes you can get a crispier texture if you boil them and soften them before baking.

    This is because when you boil them it makes them cook faster and crisp easier. Add the boiled potatoes to a baking pan and put them into the oven for 30-40 minutes. Toss them half way in between for consistent roasting. 

    Optional: If you have a cast iron skillet you can choose to fry them up in the skillet as well.

    Herb & Garlic Breakfast Potatoes - Pairing Suggestions

    This dish can be paired with any main course. Choose to pair it with chicken and brussels sprouts. Salmon and glazed carrots, smoky BBQ or delicious steak.     Storage suggestions

    Generally, breakfast potatoes should be made and eaten fresh. However, you can store them in an airtight container for up to three days.

    Description

    Ingredients

    Units Scale
    • 5 tbsp olive oil
    • 5 cloves of garlic, minced
    • 1 tbsp fresh herbs (thyme and rosemary)
    • 2 tbsp dried italian herbs
    • 2 pounds potatoes, cut into ½ inch cubes
    • 1 tsp black pepper powder
    • Salt to taste
    • 1 tsp red chilli flakes
    • 1 tbsp fresh coriander leaves, chopped

    Instructions

    1. Preheat the oven at 425F and line your baking tray to prevent sticking.
    2. In a pan, prepare infused oil by heating olive oil. Add garlic, fresh and dried herbs and fry until slightly brown.
    3. In a large bowl add potato cubes, strain the infused oil into the bowl.
    4. Add black pepper powder, salt and red chili flakes. Mix well until well combined.
    5. Place the potatoes in a lined baking tray and bake them for 40 minutes tossing them halfway through.
    6. Garnish with chopped coriander leaves.
