- 1 cup packed brown sugar
- 1/2 cup granulated white sugar
- 1/2 cup butter, melted
- 1/4 cup vegetable oil
- 2 eggs
- 1 tsp pure vanilla extract
- 1 1/4 cups all-purpose flour
- 1/4 tsp kosher salt
- 1/2 tsp baking powder
- 1/2 cup white chocolate chips
- 3/4 cup frozen raspberries
Instructions
- Preheat the oven to 350 degrees F. Line an 8×8 square baking pan with parchment paper. Leave parchment paper hanging over the sides of the pan so that you can easily remove the blondies later.
- In a large bowl, whisk together the white and brown sugar, melted butter and oil well combined, approximately 2-3 minutes.
- Add the eggs and vanilla and mix once more. Pour the flour, salt and baking powder into the bowl and mix until just combined, approximately 1 minute.
- Gently fold in the white chocolate chips, followed by stirring in the frozen raspberries.
- Transfer the batter into the prepared baking pan. Bake for 25-30 minutes. The top of the blondies should be crinkly and a toothpick inserted in the middle of the tray should come out almost clean (a few moist crumbs is great, wet batter is not!). Allow to completely before slicing. Enjoy!
