White Chocolate Raspberry Blondies

Description

Indulge in these deliciously moist and flavorful white chocolate raspberry blondies. This easy recipe uses frozen raspberries to create the sweet treat!


Ingredients

  • 1 cup packed brown sugar
  • 1/2 cup granulated white sugar
  • 1/2 cup butter, melted
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 tsp pure vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/4 tsp kosher salt
  • 1/2 tsp baking powder
  • 1/2 cup white chocolate chips
  • 3/4 cup frozen raspberries

Instructions

  1. Preheat the oven to 350 degrees F. Line an 8×8 square baking pan with parchment paper. Leave parchment paper hanging over the sides of the pan so that you can easily remove the blondies later.
  2. In a large bowl, whisk together the white and brown sugar, melted butter and oil well combined, approximately 2-3 minutes. 
  3. Add the eggs and vanilla and mix once more. Pour the flour, salt and baking powder into the bowl and mix until just combined, approximately 1 minute.
  4. Gently fold in the white chocolate chips, followed by stirring in the frozen raspberries.
  5. Transfer the batter into the prepared baking pan. Bake for 25-30 minutes. The top of the blondies should be crinkly and a toothpick inserted in the middle of the tray should come out almost clean (a few moist crumbs is great, wet batter is not!). Allow to completely before slicing. Enjoy!
