Description
This scrambled egg sandwich recipe uses a microwave to speed up the process and make a healthy breakfast sandwich in less than 5 minutes.
Ingredients
- 2 large eggs
- 1 tbsp whole milk
- 1 tbsp onions, chopped and cooked
- 1 tsp chives, chopped
- 1 tbsp cheddar cheese, grated
- 1 brioche bun, buttered
- 1 slice muenster cheese
Instructions
- Grease a cup (or a small bowl) with cooking spray, crack in the two eggs, chives, onion, season with salt and pepper to taste, and 1 tablespoon of milk. Mix it up with a fork.

Microwave for 30 seconds, gently stir any uncooked parts, add in the grated cheese, and microwave again for another 30 seconds until the egg is just set.

Remove the scrambled egg from your cup/bowl, and place on the brioche bun. Top with a the slice of muenster cheese.

I like my onions to have been cooked slow over a low heat prior to adding to this recipe. You know what you prefer, so choose accordingly (if you want them in the recipe at all!).

If you can’t get a hold of muenster cheese, you can substitute with a slice Monterey Jack. The muenster melts a little nicer, but both will work.
