Mücver (Turkish Zucchini Fritters)

Description

Mücver are Turkish fritters made with zucchini (courgettes!), crispy on the outside and moist on the inside, mucver are perfect as an appetizer, or as a side dish.


Ingredients

Mucver

  • 4 zucchinis, grated
  • 1/2 cup of dill
  • 1/2 cup of parsley
  • 1/2 cup fresh mint
  • 4 spring onions
  • 3 large eggs
  • 1 teaspoon of baking powder
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 4 tablespoons of all-purpose flour
  • 3 cups vegetable oil

Lemon Yogurt Dip

  • 1 cup of yogurt
  • lemon zest

Instructions

  1. In a large bowl, mix the grated zucchini, spring onions, parsley, dill, mint, and eggs together. Once mixed, add the flour, black pepper, salt, and baking powder. Mix again until completely incorporated.
  2. Heat the oil over medium heat in a deep frying pan or pot. Spoon hockey puck-sized dollops of the fritter batter into the oil to fry, turning as needed, until they are cooked through with a golden brown exterior. 
  3. Set aside your cooked mucver on paper towels to allow any excess oil to drain. Serve it up with lemony-yogurt, or with whatever condiments your heart desires!
