For the Halloween bread
- 1 1/4 cup bread flour
- 1/2 cup all purpose flour
- 1/4 cup granulated sugar
- 1 tbsp milk powder
- 2 tsp active dry yeast
- 1 egg yolk
- 1/4 cup milk
- 1/2 cup cold water
- 5 tbsp butter, softened
- 1 1/4 tsp salt
For the filling
- 2 beef sausages, chopped
- 5 tbsp ketchup
- 2 tsp italian seasoning powder

Instructions
- In a large mixing bowl, whisk the flours, sugar, milk powder, and yeast together until incorporated.
- Add in the egg yolk, milk, and cold water. Using an electric mixer with the hook attachment, stir the dough until well-combined, about 5 minutes.
- Add the butter and salt, and mix until a completely smooth dough forms, about 10 minutes. Cover the dough, and set aside in a warm place. Let it rest and rise for 30 minutes. After 30 minutes, uncover the dough, push it down on a flat, lightly-floured surface, and divide into 12 equal pieces. Gently roll out the dough balls into 5-inch circles.
- Add a few bits of chopped sausage, a dab of ketchup, and a pinch of Italian seasoning to the center of each dough circle, and then fold the dough over itself to trap the fillings into the center. Pinch the dough’s edges to seal it shut.
- Using a thread soaked in oil, tie around the dough balls in a crosswise pattern that resembles a pumpkin. Cover once more, and let rise for an hour.
- Preheat the oven to 350 degrees F.
- Brush the tops and sides of the risen pumpkin bread with an egg wash (optional). Bake for 12-15 minutes or until golden brown. Serve warm, and enjoy!
Notes
- A damp towel to cover the dough is fine. For best results cover your dough in a nonporous, fitted cover (like a lid, or cling film).
- I use little pieces of clove to mimic the pumpkin stem. Once the Halloween bread has been baked, I stick the cloves into the top of the bread. This is purely aesthetic.
- The thread can be discarded before serving!
