Description

This delicious twist on traditional stroganoff uses halloumi cheese for a flavorful and satisfying vegetarian meal.


Ingredients

  • 1 tablespoon olive oil
  • 250 grams halloumi cheese, cubed
  • 2 tablespoons butter (unsalted)
  • 1 onion, diced
  • 2 cups mushrooms, sliced
  • 2 garlic cloves, minced
  • 1/4 cup white wine
  • 2 tablespoons all-purpose flour
  • 1/2 cup milk
  • 1 teaspoon paprika, ground
  • 1/2 cup sour cream

Instructions

  1. Heat a non-stick skillet to medium-high. Add the olive oil and once hot, add halloumi cheese.
  2. Pan fry the cheese until it’s browned on all sides. Set it aside.
  3. Add the butter into the hot pan and let it melt (you may want to reduce your heat to avoid burning your butter).
  4. Add onion, garlic and mushrooms and cook until browned.
  5. Add white wine and cook until it evaporates, 2-5 minutes.
  6. Add flour and mix well. Add the milk, paprika, salt and pepper.
  7. Return the cooked halloumi to the skillet and add the sour cream. Cook for a few minutes, mixing together, until the sauce thickens to your liking. Enjoy! 

Notes

Serve with white rice or noodles/pasta, and season with salt and pepper to taste.
