Description

Impress your guests this holiday season with a homemade Christmas Pavlova. A light and airy meringue topped with whipped cream and fresh berries.


Ingredients

For the meringue

  • 6 large egg whites (220g) at room temperature
  • 1 cup superfine sugar (330g)
  • 1/2 tsp agar agar
  • 1/4 tsp white vinegar
  • 3 tbsp cornstarch
  • Green food coloring
  • 1-2 tbsp cake sprinkles (optional)

For the whipped cream

  • 1 cup heavy cream
  • 1/3 cup powdered sugar

For the toppings

  • 1/2 cup pomegranate arils
  • 6-8 strawberries, quartered
  • 1/3 cup blueberries
  • 8-10 fresh mint leaves

Instructions

  1. Preheat oven to 285 degrees F. and line a baking sheet with parchment paper.
  2. Whisk egg whites, vinegar, and agar agar until soft peaks form using a balloon whisk attachment in a stand mixer. Gradually add the superfine sugar, whipping until firmer, followed by the cornstarch, and whip until stiff peaks form.
  3. Add 3/4 of the meringue into a piping bag with a star tip. Mix the remaining quarter with green food coloring – add to a different piping bag.
  4. Use a round mold as a guide, pipe a white meringue circle, smoothing its tips.
  5. Pipe green Christmas trees around the wreath and drizzle over some birthday cake sprinkles.
  6. Let the pavlova bake undisturbed for 75 minutes. Turn off the oven and let the meringue cool completely inside the oven.
  7. Prepare the whipped cream by whipping the heavy cream and powdered sugar to your preferred consistency.
  8. Once completed cooled, top the meringue with the whipped cream. Decorate the pavlova with pomegranate arils, strawberries, blueberries and mint leaves. Enjoy with your nearest and dearest!

Notes

  • You can adjust the intensity of the green color by adding more food coloring. Just remember, it’s easy to add more…but it can’t be undone once it’s there, so proceed with caution until you get the color you want.
  • I recommend using gel coloring to avoid any extra moisture.
  • If you find that your meringue has a tendency to brown, it’s likely that your oven is a bit too hot. Reduce the temperature a little the next time.
