Ingredients

  • 2 cups Semi Sweet Chocolate Chips
  • 1/2 cup Butter, cut into pieces
  • 3 large Eggs
  • 1 1/4 cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1 tbsp Cocoa Powder
  • 1 1/2 tsp Pure Vanilla Extract
  • 1/4 tsp Baking Soda
  • 1/2 tsp Instant Espresso Powder
  • 1 tsp Salt

Instructions

  1. Pre-heat your oven to 350 degrees F. Grease your baking pan.
  2. Melt one cup of chocolate chips with the butter and espresso powder in a bowl over a bain-marie, keeping the heat low, and stirring occasionally. You want to form a smooth ganache.
  3. Turn off the heat, add the sugar and whisk until completely combined. Remove the bowl from the bain-marie.
  4. In a separate bowl, whisk the flour, salt, and cocoa powder together.
  5. Add the eggs, one by one, to the chocolate mixture, whisking vigorously until combined. Add the flour mixture, vanilla extract, and baking soda; stir it into your mixture. Gently fold in the remaining chocolate chips.
  6. Pour the batter into your prepared baking pan. Bake for 20-25 minutes or until a wooden toothpick inserted in the centre comes out with no more than a few moist crumbs sticking to it.
  7. Cool on a wire rack, and then cut into squares.
