- 2 cups Semi Sweet Chocolate Chips
- 1/2 cup Butter, cut into pieces
- 3 large Eggs
- 1 1/4 cups All-Purpose Flour
- 1 cup Granulated Sugar
- 1 tbsp Cocoa Powder
- 1 1/2 tsp Pure Vanilla Extract
- 1/4 tsp Baking Soda
- 1/2 tsp Instant Espresso Powder
- 1 tsp Salt
Instructions
- Pre-heat your oven to 350 degrees F. Grease your baking pan.
- Melt one cup of chocolate chips with the butter and espresso powder in a bowl over a bain-marie, keeping the heat low, and stirring occasionally. You want to form a smooth ganache.
- Turn off the heat, add the sugar and whisk until completely combined. Remove the bowl from the bain-marie.
- In a separate bowl, whisk the flour, salt, and cocoa powder together.
- Add the eggs, one by one, to the chocolate mixture, whisking vigorously until combined. Add the flour mixture, vanilla extract, and baking soda; stir it into your mixture. Gently fold in the remaining chocolate chips.
- Pour the batter into your prepared baking pan. Bake for 20-25 minutes or until a wooden toothpick inserted in the centre comes out with no more than a few moist crumbs sticking to it.
- Cool on a wire rack, and then cut into squares.
