Description

Caramelized onion and goat cheese burgers are a deliciously elevated twist on the classic cheeseburgers.


Ingredients

Units Scale
  • 3 large onions, thinly sliced
  • 2 lb ground beef
  • 2 tsp Worcestershire sauce
  • Salt, to taste
  • Pepper, to taste
  • 6 burger buns, split
  • 2 tbsp butter
  • 1 cup sliced iceberg lettuce or arugula
  • 1/2 cup goat cheese
  • Your preferred burger sauce

Instructions

Caramelize the Onions

  1. Heat a heavy-bottomed stainless pan over medium heat.
  2. Add thinly sliced onions to the pan.
  3. Cook slowly for 30-40 minutes, stirring occasionally.
  4. Add small amounts of water as needed to prevent burning (instead of using oil).

Prepare the Burger Patties

  1. In a large bowl, gently mix ground beef, Worcestershire sauce, salt, and pepper until just combined.
  2. Divide mixture into 6 equal portions.
  3. Shape each portion into a ½-inch thick patty.
  4. Preheat grill to medium-high heat and grease well. Place patties on the grill and cook for 6-7 minutes. Flip once and cook for another 6-8 minutes until internal temperature reaches 160°F (71°C).

Toast the Buns

  1. Melt butter in a pan over medium heat.
  2. Place split buns cut-side down in the pan.
  3. Toast for 30-60 seconds until lightly golden.

Assemble the Burgers

  1. Spread your favorite burger sauce(s) on both halves of the toasted buns. Layer bottom bun with sliced lettuce and a generous portion of caramelized onions.
  2. Place grilled patty on top of the onions.
  3. Crumble, spread or simply place your goat cheese over the hot patty.
  4. Top with the upper bun and serve immediately. Enjoy!

Notes

Burger Sauce

For the burger sauce, I use American Burger sauce which is available at most supermarkets (but it’s essentially a mix of ketchup and mayonnaise with a touch of mustard). I find that BBQ sauce goes quite well with this recipe too (but it does overpower the caramelized onions a bit). 

Caramelizing Onions Without Oil

Cooking onions without oil takes longer, but the natural sugars intensify the flavor. Adding water in small amounts prevents burning.
