Billy Miner Pie (The Keg Copycat)

Description

Craving The Keg’s famous Billy Miner Pie but don’t want to leave your house? Same. Learn how to make this delicious copycat Billy Miner Pie at home.


Ingredients

Units Scale

For the pie crust

  • 25 Oreo cookies (no filling or filling removed)
  • 7 tbsp butter, melted

For the ice cream pie

  • 3 quarts mocha ice cream (about 6 pints)

For the toppings

  • 1/2 cup semisweet chocolate, melted
  • 1/4 cup caramel sauce
  • 1/2 cup almonds, sliced

Instructions

Prepare an 8-inch springform pan with parchment paper.

Preparing the crust

  1. Using a blender, crush the cookies into crumbs.
  2. Mix the melted butter into the crushed cookies, and press the mixture evenly into the bottom of your prepared springform pan to create your cookie base.
  3. Place the pan (with the cookie base) into the freezer for 30 minutes.

Preparing the ice cream pie

  1. Allow your ice cream to thaw for at least 10 minutes (or as needed). You want it soft enough so that you can scoop it, and pliable enough that you can shape it (but not completely melted).
  2. Spread the ice cream in an even layer over the chilled cookie base. Put the pie back into the freezer, and chill until frozen, at least 6 hours (ideally overnight).

Serving Billy Miner Pie

  1. Carefully remove the frozen Billy Miner pie from the springform pan.
  2. Sprinkle the sliced almonds around the edges of the pie. Drizzle over the melted chocolate and caramel sauce. Serve immediately (or store in the freezer), and enjoy!
