    Mushroom Omelette with Chèvre, Cherry Tomatoes, and Sausage

    Start your morning (or afternoon, or evening, I won't judge) with this delicious mushroom omelette, topped with crumbly chèvre, cherry tomatoes and chopped sausage. Not only is this a delicious, flavourful, start to your day, it's actually kinda good for you too. And that's a big win.

    I love mushrooms in my omelette. They have this rich, earthy taste that just brings so much delicious contrast to the lighter, airier flavours of the egg…Not to sell you short on the chèvre (which is just fancy talk for goat's cheese, which brings tanginess), the cherry tomatoes (which bring a very subtle sweetness), and the sausages (which bring the meatiness!).

    How Do You Make an Omelette?

    Omelettes (even a mushroom omelette like this one) can be as simple or as tricky as you want them to be. You may have heard that some chefs use omelettes as a test of culinary skill - it's true, and it makes perfect sense. Preparing a simple dish perfectly takes some nuance and a lot of attention to detail! Every little mistake is plain for the world to see.

    Don't worry, bestie (this is not a recipe to worry over). Because we're not looking to make the perfect classical omelette today. We're making a mushroom omelette with chèvre, cherry tomatoes, and sausages. And it’s supposed to be a fun, easy, and tasty omelette experience!

    I don't want you to drive yourself insane trying to scramble, spread, and fold this into that perfect French culinary school omelette. Just relax, this dish is all about good vibes and a delicious hassle-free meal. Just let your omelette be, top it with the cooked ingredients and chèvre, and fold it like the low-carb French taco that it is.

    But let's say you do panic. Then what? I want you to sit cross-legged at your brunch table. And repeat after me:

    Ohmmmm-lette.
    Ohhhhhmmmmmmmm-lette.

    Description

    This delicious mushroom omelette recipe is topped with tangy chèvre, sweet cherry tomatoes, and chopped sausage. Not only is it a delicious, flavourful, start to your day, it’s actually kinda good for you too. A perfect way to start your day!


    Ingredients

    Units Scale
    • 3 Large Eggs, beaten
    • ½ cup mushrooms, chopped (I like a mix)
    • 1 sausage, chopped
    • ¼ cup chèvre, crumbles
    • â…“ cup cherry tomatoes, halved
    • Salt, to taste
    • Pepper, to taste
    • Sunflower oil, for cooking
    • Butter, for cooking

    Instructions

    1. In a small non-stick frying pan, heat vegetable oil, and fry mushrooms and chopped sausage over a medium-high heat for about 2-3 minutes, until almost cooked through. Add in the halved tomatoes, and fry (stirring occasionally) for 1-2 minutes over medium heat. Remove from pan.
    2. Place the pan back on the low-medium heat; melt butter in the pan. Pour in beaten egg. Cook for 3-4 minutes or until almost done. Season to taste.
    3. Spoon mushroom mixture over one half of the omelette. Sprinkle chèvre crumbles over mushroom mixture.
    4. Using a spatula, fold the empty half of the omelette over the side with the mushroom and chèvre mixture. If needed, cook for a moment more otherwise, remove from heat.
    5. Garnish with more chèvre crumbles, if desired. Bon appetit!

    Notes

    If you’re cooking this recipe using only one pan, make sure to wipe it down before pouring in the beaten eggs. We don’t want that omelette to stick!

      An omelette is often my go-to quick and filling meal for busy days when I don’t have a lot of time to prepare dinner! I almost always add mushrooms and goat cheese (and lots of spinach), but you’ve taken the usual omelette up a notch with the cherries and sausage! Love it!

      Who needs an omelette station at brunch when you can make it yourself. Thanks for the varieties to make the basic cheese omelette a thing of the past. Variety is the spice of life after all.

        Lol! I agree! I’ve actually over-complicated omelettes in the past and driven myself a little bonkers trying to make the perfect French omelette, while along there were so many delicious varieties that could be made to a regular cheese omelette that I was letting slip by!
